How to make Chocolate Fudge at Home

INGREDIENTS REQUIRED

Chocolate 300g Chopped
150g Condensed Milk
150g Butterscotch Sauce
1 tbsp Cocoa Powder
For Butterscotch Sauce: 100g Sugar
100ml Cream
50ml Milk

METHOD OR PREPARATION

1. First we going to make BUTTERSCOTCH SAUCE at home for our butterscotch chocolate fudge, so take nonstick kadai and switch on the flame , add 100g of white sugar that we eat regular at our home, now spread the sugar in the kadai so that it can melt evenly & we are not adding water to this , we are just melting it with the heat, and mixing it gently to break the lump, when the half of the sugar is melted then lower the flame and then continue it to melt it until it get amber colour, we are making basically caramel by dry method.



2. Now the sugar is the golden colour and you can see the picture below that showing very small bubbles, now turn off the flame this is the perfect stage of butterscotch sauce.

3. Now turn on the flame ,Add 30g of butter which means 2tbsp and the carefully mixing it gently.



4. Now take 100ml of fresh cream & add 50ml of milk to this cream now add this all in the caramel or butterscotch sauce mixture and keep mixing it to prevent from lumps.





5. Now you can see in the picture butterscotch sauce is thick as well as bubbling & creamy so turn off the flame for cooling it at room temperature.


6. FOR CHOCOLATE PREPARATION here i am using Dark chocolate compound but you can use real chocolate for this recipe. Here i am taking 300g of chocolate and cutting into smaller chunks but you can cut it also in fine form also.



7. Now i am using nonstick pan , you can use non stick kadai or fry pan and heat it at medium flame then add 150g butterscotch sauce that we have prepared, 150g condensed milk, mix it gently, now when you see the small bubbles like in the picture then turn off the flame.





8. Now add chopped chocolate to it , make sure your flame is off otherwise your chocolate will burn mix it gently for 3-4 minutes. Now our chocolate fudge is ready.



9. Take any tin and lining it with butter paper, and pour this prepared mixture to it and remaining it at normal or room temperature for 30 minutes and after 30minutes keep it in the fridge for 3-4hr but i kept it for 8hr or overnight.




10. Now our fudge is ready, then remove the butter paper if you used, cut it into the pieces and i am using the room temperature water for dipping the knife and wiping it with clean cloth because it helps in easily cutting

11. Now decorate it with cocoa powder. I am using basic cocoa powder and spreading on the fudge with the help of sieve as shown in the picture. Now our chocolate fudge is ready and serve it.
