INGREDIENTS REQUIRED

Water 1/2 cup
Citric Acid 1 tsp OR Lemon juice 3 tsp Sugar 3 tsp
Salt 1/2 tsp
Yellow color-1 pinch
Yellow chilli powder 1/2 tsp
Oil 2 tbsp
Besan 130g
Oil to coat tin
Baking soda 1/2 tsp
Water-1 tbsp
Tandoori Marinate for Dhokla Red chilli paste 2 tbsp
Black salt 1/2 tsp
Chat masala 1/2 tsp
Dahi / Curd 1/4 cup
Mint Leaves -1 tbsp
Fresh Coriander 2 tbsp
Dahi 2 tbsp
Mustard oil -1 tbsp
Mustard seeds -1 tsp
Ginger Garlic Paste 1/2 tsp
Oil to cook

METHOD OF PREPARATION

1. Take a big mixing bowl & add 1/2 cup of luke warm water, 1tsp Citric Acid OR 3tsp Lemon juice, 3tsp Sugar , 1/2 tsp Salt , 1 pinch of yellow food color & mix it well.







2. Now add 1/2 tsp of Yellow chilli powder, 2tbsp oil ( you can use any neutral oil) & mix it well & add 130g besan & mix it again once it becomes thick batter then whisk it for about 5 minute, this will help to incorporate air in this & makes our dhokla extra fluffy, Don't use any blender for this step. Now our batter is ready.













3. Now use 1/2 tsp baking soda & add 1tbsp water & mix well & add to the batter & mix it well with your hands & spoon , make sure mix only in one direction, now our batter consistency looks great.





4. Now coat the cake tin with oil & transfer the prepared batter to it, now cook the dhokla, i am using idli steamer in which i have added some water & the spacer basically you can use any bowl or spacer that can increase the height from the water as shown in picture, above that place the cake tin in which batter is present & cover the idli Cooker & then cook it for about 15 minutes.Now after 15 minutes cooking, the lower down the flame & cook it for 5 minutes more.







5. For Tandoori Marination, take a big bowl , add 2tbsp red chilli paste, 1/2 tsp of black salt, 1/2 tsp of chat masala, 1tbsp of chopped mint leaves, 2tbsp of freshly chopped coriander leaves & 1/2 cup of curd & mix it well so that everything is well combined.








6. Now for tadka or frying, i am using tadka(fry) pan, heat it up & then add 1tbsp mustard oil & heat it up at high flame until it becomes super hot & smoky, this will bring the tandoori flavour, once it get smoky then turn off the flame & add 1tsp of mustard seeds, 1/2 tsp ginger garlic paste & cook it for few seconds after that put it into the marinate paste & mix it well & keep it aside.









7. Now after 20 minutes take out the dhokla from the idli Cooker & place it on the wire stand, & cut the dhokla after it becomes cool at room temperature for about 30 minute.


8. Now cut the dhokla into the cubes & coat it with the prepared marinate properly. & Take a non stick pan & add 2tbsp of oil, heat it & after that place the dhoklas into it. Cook it for 30second each sides & keep flipping & cooking these Tandoori dhoklas from all sides.






 9. Now our Tandoori Dhokla is ready to serve. Serve it with onions & green chutney & also sprinkle it with chopped coriander leaves.
