INGREDIENTS REQUIRED

1 litre Milk
200 gms Palm Jaggery(Black) {Buy Now}
1 tbsp curds
Terracotta or kullad pots
METHOD OF PREPARATION

1. Take a non stick pan and add 1 liter full fat milk and keep stirring it at low to medium flame and make sure that it doesn't stick on the sides and bottom of the pan and keep it stirring till it's become half of its original quantity. It takes about 20-30 minutes of reducing the milk to its half.


2. While Milk is reducing take a palm jaggery, it is very quite quite essential part of Mishti Doi and break or chop this palm jaggery finely.

3. Now our Milk has reduced to almost its half quantity and it's colour is changed and now has little thicker in texture and now keep the flame low and then add chopped Palm Jaggery to it, This palm jaggery will provide the nutty taste flavour and aroma to this Mishti Doi and keep mixing it and the colour is almost distinct changed.






4. Now switch off the flame and transfer this into the deep bowl as shown in the picture and keep this bowl aside and let it cool down at room temperature or to low down its temperature keep whisking it for 3-4 minutes.


5. Now our Mixture is cooled down and take the curd culture and beat or mix it well and this is lump free mixture to be added to the jaggery and milk mixture in the bowl and mix it Properly.



6. Now Transfer this mixture to the other ware or bowl as shown in picture and cover it with aluminium foil and kept aside at room temperature for 3-4 hours and once it sets well this goes in the refrigerator to chill further.




7. Now our Homemade Mishti Doi Recipe is Ready to Serve chill.
