  1. Prepare the Potatoes
    Wash and peel (optional) 3–4 large potatoes. Cut them into long thin strips like French fries (around 1.5–2 cm thick). Immediately place them in water to prevent discoloration.

    Heat mustard oil in a pan on high flame until it starts smoking slightly. This removes the raw smell and bitterness.

  3. Add Panchphoran & Whole Spices
