For Suji Dough:
- 1 cup Semolina (Suji/Rava)
- 1 cup Water
- ½ tsp Cumin Seeds (Jeera)
- 1 tbsp Oil
- Salt to taste
For Spicy Potato Stuffing:
- 4 medium Boiled Potatoes (peeled & mashed)
- 1 medium Onion (finely chopped)
- 1 small Capsicum (finely chopped)
- 1 Tomato (chopped)
- 1–2 Red or Green Chilies (chopped)
- 1 tsp Grated Ginger
- ½ tsp Cumin Seeds
- ½ tsp Coriander Powder
- ¼ tsp Turmeric Powder
- ¼ tsp Red Chili Flakes (optional)
- ¼ tsp Garam Masala
- 1 tsp Lemon Juice (or ½ tsp Amchur Powder)
- Salt to taste
- 1 tbsp Oil for sautéing
- Fresh Coriander Leaves (chopped)
For Cooking:
- Oil for shallow frying

Step 1: Prepare the Suji Dough
- Heat oil in a kadhai and add cumin seeds.
- When they crackle, add 1 cup water and salt.
- Add 1 cup semolina (same quantity as water).
- Stir continuously on medium flame until it thickens like dough.
- Turn off the flame and transfer it to a bowl to cool slightly (don’t let it get cold).
Step 2: Prepare the Spicy Potato Filling
- In the same kadhai, heat oil again and add cumin seeds.
- Add grated ginger (and garlic if you like).
- Add chopped onion, chilies, and sauté till golden.
- Add capsicum, tomato, and stir for a minute.
- Now add salt, chili flakes, coriander powder, and turmeric.
- When tomatoes soften, add mashed potatoes.
- Mix well, then add garam masala and lemon juice (or amchur).
- Add chopped coriander leaves and mix again.
- Your spicy potato stuffing is ready!
 
Step 3: Shape the Suji Dough
- Lightly grease your hands and surface with oil.
- Gather the warm suji mixture into a smooth ball.
- Roll it out into a medium-thick flat roti (don’t worry if edges crack).
- Cut small round pieces using a glass or cutter (like puris).
- You’ll get around 14 pieces from 1 cup suji.
Step 4: Make the Stuffed Snacks
- Take a small portion of potato filling and shape it into a patty.
- Place it on one suji disc and cover it with another.
- Gently press edges to seal and give it a round shape.
- Use the back of a knife to make light designs on both sides.
- Repeat for all pieces (you’ll get 7 stuffed snacks).

- Heat a tawa or non-stick pan with a little oil.
- Place the prepared pieces and cook on high flame.
