For Corn Tortillas

1 cup Maize flour

1 cup all purpose flour

1 tsp Salt

1 tsp baking powder

2 tbsp butter

Boiling hot water to make dough

Ingredients required for Enchiladas Sauce Recipe

2 tbsp olive oil

1 tbsp all purpose flour

1 tbsp smoked paprika

10-12 cloves of garlic

 8 deseeded kashmiri red chilli

1/2 sliced onion

2 roasted chopped tomatoes

1 cup vegetable stock

1 tsp coriander powder

1/2 tsp dried oregano

1 tsp cumin powder

Salt to taste

1/2 tsp black peppercorns

1/2 tsp sugar

1/2 cup + 1/2 cup Vegetable stock for layering before baking

10g dark chocolate

For Enchiladas Filling

1 tbsp oil

2 cups of boiled kidney beans

1 tsp red chilli powder

1 tsp oregano

1 tsp cumin powder

Salt to taste

2 tbsp Forzen sweet corn

100g cottage cheese in small pieces

1/2 cup vegetable stock

1/2 Capsicum chopped into cubes

1 onion finely chopped

2 chopped green chilli

2 tbsp chopped coriander

For Assembling

Mozzarella Cheese

Cheddar Cheese


1. For corn Tortillas, Take big mixing bowl and add 1 cup of maize flour, 1 cup of all purpose flour, 1 tsp of salt, 1 tsp of baking powder and 2 tbsp of butter, mix it well properly.

2. Make dough by using boiling hot water, be careful it can be hot, bring this dough to a smooth consistency.

3. Cover the dough with the damp cloth and set it aside for 15 to 20 minutes.

4. How to make vegetarian enchiladas sauce, For Enchiladas Sauce, Take 8 Kashmiri Red Chilli, cut it's top part and remove the seeds from it, also remove the membrane of the chilli, keep this aside.

5. Now heat the wire roasted and place the 2 tomatoes on it, roast it until black, it will take about 2 minutes but brings alot of flavour in the sauce, 

Then peel its black skin and chopped this tomatoes.

6. Take a wok, add 2 tbsp of olive oil, heat it at low heat and when it gets hot then add 1 tbsp all purpose flour for thickening the sauce.

7. Now add 1 tbsp of smoked paprika, if you have not smoked paprika then add 2 tbsp kashmiri red chilli powder, 

Stir it few seconds.

8. Now add 10 to 12 cloves of garlic, and deseeded 8 Kashmiri red chilli, stir it well.

9. Then add 1/2 onion chopped and 2 roasted chopped Tomatoes, 1 cup of vegetable stock and stir it properly.

10. Now add 1 tsp coriander powder, 1/2 tsp dried oregano, 1 tsp cumin powder, cook it for about 2 to 3 minutes.

11. Add salt to taste, 1/2 tsp black peppercorns, 1/2 tsp sugar, mix it well and turn off the flame and let it cool down.

12. For veggie filling, heat up the pan, add 1 tbsp of olive oil, 2 cups of boiled kidney beans, 1 tsp of red chilli powder, 1 tsp oregano, 1 tsp cumin powder, salt to taste, 2 to 3 tbsp of frozen sweetcorn.

13. Roast it at high flame for about 2 to 3 minutes and add 100g cutted cottage cheese and stir or toss it well for about 2 to 3 minutes.

14. Add 1/2 cup of vegetable stock, mix it well and turn off the flame.

If you have not vegetable stock then you can also use water to this recipe.

15. Now add 1/2 capsicum chopped, 1 finally chopped onion, 2 chopped green chillies, 2 tbsp of chopped coriander, mix it well and keep it aside our filling is ready.

16. Continue to Tortilla, after 4th step, Now our dough is ready for further procedure, divide the dough into 8 smal portions of about 8 inches.

17. Take big zip lock bag cut from 2 portion, smear oil on it, place one dough ball on it and cover it with another half portion of zip lock.

18. Roll it to about 7 to 8 inches, add it in the hot non stick pan and cook it for about 15 to 20 seconds from side and then flip it cook another side for another 15 seconds, and finally our Tortillas are ready.

19. Continue to Veggie Enchiladas, after 11th step, when the cooked sauce material is cooled then add it into the blender and make it into the sauce.

20. For Assembling, Take prepared tortillas, if it gets hard the you can directly heat it on the stove by placing on directly flame on stove.

21. Apply some prepared Enchiladas sauce on Tortillas and add some prepared veggie stuffing, 2 tsp mozzarella cheese and roll it tightly.

Similarly make another rolls like this.

22. Now for baking these, we need very thin sauce, so add 1 cup vegetable stock, 10g dark chocolate in the Enchiladas sauce and blend it again and again and add salt to taste and mix it well.

23. Take baking tray and pour some sauce to it, to make layer to avoid burning, place the tortillas rolls and coat it with the Enchiladas sauce.

24. Sprinkle pre diced mozzarella and cheddar cheese.

15. We have a oven preheated, it is a 200°C with both the top and bottom rods on, place the Enchiladas in it and bake it at 200°C for about 10 to 11 minutes, cut it into small parts.

16. Finally our Homemade Vegetable Enchiladas Recipe is ready to Serve, Garnish it with coriander leaves.
