Regarding the Chicken:

1 pound boneless, skinless chicken thighs, chopped up

1/2 cup Greek yoghurt, plain

2 teaspoons ghee

2 minced garlic cloves

1 tbsp. grated ginger

1 teaspoon garam masala

1 tablespoon turmeric

1/2 teaspoon cumin

1 tablespoon smoked paprika

1 teaspoon of salt

To make the sauce:

1/2 cup pureed tomatoes

1 quart thick cream

2 tbsp ghee 2 chopped garlic cloves

1 tbsp. grated ginger

1 teaspoon garam masala

1 tablespoon turmeric

a half teaspoon cumin

1 tablespoon smoked paprika

For the Zucchini Noodles: 1/2 teaspoon salt

2 medium-sized spiralized zucchinis

2 teaspoons ghee

Season with salt and pepper to taste.


METHOD OF PREPARATION 

1. Combine the chicken, yoghurt, garlic, ginger, garam masala, turmeric, cumin, smoked paprika, and salt in a large mixing bowl. Let it to marinade for at least 30 minutes, but no more than 4 hours.


2. In a large skillet over medium-high heat, melt 2 tablespoons ghee. Cook until the marinated chicken is browned on all sides, about 5-7 minutes. Set the chicken aside after removing it from the skillet.


3. Add 2 tablespoons ghee, garlic, ginger, garam masala, turmeric, cumin, smoked paprika, and salt to the same skillet. Stir for about 1-2 minutes, or until aromatic.


4. Stir in the tomato puree and heavy cream until thoroughly mixed. Bring the mixture to a low boil and cook for 5 minutes.


5. Return the chicken to the skillet and toss until thoroughly coated with the sauce. Cook for another 5 minutes, or until the chicken is thoroughly done.


6. Heat 2 tablespoons ghee in a separate skillet over medium-high heat. Cook for about 3-5 minutes, or until the zucchini noodles are soft. Season to taste with salt and pepper.
