INGREDIENTS REQUIRED

1 cup All purpose flour
2 tbsp Semolina / rava
4 tsp Ghee
1 tsp cumin seeds
1/4 tsp Baking soda
1 tsp sugar
1 tsp Salt
1/2 cup Water

METHOD OR PREPARATION

1. For Stuffing : Chop two fresh green chillies finely and cut the ginger roughly with the skin and crush the ginger pieces roughly.





2. Take a Pan & Heat a deep pan on moderate flame. Once the pan heats up add ghee, cumin seeds, fennel seeds, chopped chillies and crushed ginger. Stir or mix it gently and add boiled peas and give a few tosses. Then add red chilli powder, Ground Garam masala powder and salt.











3. Roughly cut the potatoes as shown in the picture and add them to the pan with mint and coriander leaves. Mix all the ingredients properly, turn the flame off and let the stuffing cool down to room temperature.





4. For Outer Covering: Take a bowl having the refined flour, melted ghee, some semolina, un-toasted cumin seeds, sugar, some baking soda and salt in a bowl. Mix all these ingredients till they start looking like breadcrumbs as shown in the picture. Once done, add water and knead a stiff dough by massaging it with your hands for 3 to 5 minutes. Cover the dough with a damp cloth for 15-20 minutes.










5. For Assembly: After 15-20 minutes , re-massag the dough again & then Divide the dough into equal portions. Roll the first dough in a circular disc and divide it into half with the help of knife. At the base of the half apply cold water with your fingertip and form a conical shape of the dough as shown in the picture.














6. Take a ball of stuffing and make it into a teardrop shape and place it in the cone that we have prepared Apply some water on all the sides of the open flap of the cone and seal the cone to form the samosa shape making sure the seal is does not break from any side. Cover all the samosas with a cloth.











7. For Frying: Take oil in the big pan and deep fry the samosas in it on low flame till they turn golden brown colour. If you use high flame it will golden from outside but remains raw from inside.




7. Transfer all prepared samosas on the absorbent kitchen paper. Now serve these samosas with chutney or sauce.
