How to make Kaju Katli at Home |
INGREDIENTS REQUIRED
Cashewnuts (Kaju) 250g
Milk Powder 40g (15% of Cashew)
Sugar 200g (80% of Cashew)
Water 100ml
Ghee 1 tsp
Silver Warq 7-8 leaves (optional)

METHOD OF PREPARATION
1. Take fresh 250g cashewnuts in the big plate & remove the black cashew or defective cashew piece as shown in picture.
1. Take fresh 250g cashewnuts in the big plate & remove the black cashew or defective cashew piece as shown in picture.
2. Now put this cashew in the blender jar & blend it untill it becomes in the powder form. Don't blending it continues means first blend for 2second & then wait 1second & then blend 2second similarly follow this procedure, this is so done because cashew nuts contain its oil & we don't want that it came out otherwise it will not be in good in Kaju katli.
3. Now Pass this prepared powder through the sieve & now add 40g milk powder so that to make the kaju katli soft in texture & bringing the more good flavour in kaju katli. Now our milk & kaju(cashewnuts) powder is ready.
4. For Sugar Syrup, take a wok , i am using iron wok & then add 200g sugar to it & add 100ml water & cook it on medium flame. To check our sugar syrup or Chashni is ready , take a small bowl of water & now add 1-2 drops of syrup if it settled down in the water then its mean our sugar syrup (chashni) is ready. & Switch the flame off.
5. Now add Cashewnuts & milk powder that we have prepared in 3rd step & continuously stirring it or mixing it , now you can see this has become like wheat flour dogh & now coating this all mixture the surrounding of the wok(kadai) as shown in the picture & let it cool for 10-15 minutes.
6. Now take any butter paper or kaju plastic paper as shown in the picture & now place the prepared mixture on the plastic paper & knead it by properly as shown it picture. & Make it into thin sheet with the help of roller & coat it with 1tsp ghee properly.
7. Now coat it all the katli with 7-8 silver wraq leaves as shown in the picture & let it drying at room temperature for 30minutes cut the kaju katli into the pieces.
8. Now our Homemade Kaju Katli Recipe is Ready to Serve.
