For Vegetable Biryani Recipe
INGREDIENTS REQUIRED

1.5 cups of Basmati Rice {Buy Now}
Carrots 2 medium
Carrots 1/2 inch pieces 2 medium
French beans 1/2 inch pieces 15
Cauliflower 10-12 florets
Green peas shelled 1 cup
Salt to taste
Rose water 1/2 teaspoon
Saffron (kesar) a few strands
Fresh tomato puree 1 cup
Garam masala powder 1 teaspoon
Green cardamons 8
Black cardamom 1
Cloves 15
Cinnamon 1/2 inch stick
Bay leaf 1
Caraway seeds (shahi jeera) 1/2 teaspoon
Ginger-garlic paste 1 1/2 tablespoons
Turmeric powder 1 teaspoon
Red chilli powder 1 tablespoon
Coriander powder 1 tablespoon
Yogurt 1/2 cup
Fresh coriander leaves chopped 2tbsp
Fresh mint leaves chopped 2 tablespoons


METHOD OF PREPARATION

1. Take a bowl and add 1.5 cups of Rice, add add sufficient amount of water to it and let it soak for 30 minutes and now take 1st deep pan and add 3tbsp Oil, 2tsp Caraway Seeds (Shahi Jeera), 8-10 Cloves, 4 Green Cardamoms, 2 Bay Leaves, 1 inch Cinnamon Stick, 2 medium sliced onions and saute it well.





2. Now Take another 2nd deep pan of Boiling and add 4-6 Green Cardamoms, 1 Black Cardamom, 1 Blade Mace (Javitri), 2 Bay Leaves, 1 inch Cinnamon Stick, 8-10 Cloves, 1 Star Anise (Phool Chakri) and also add Salt to Taste, 2tbsp Oil and then add soaked Rice and cover it with lid let it cook for some minutes.




3. Now take 3 Green Chillies break it and then add it in the 1st deep pan and now add 2tbsp Ginger-Garlic Paste and then add 2 medium chopped Tomatoes.

4. Now add 1/4 tsp Turmeric Powder, 2tsp Coriander Powder, 1.5 tsp Cumin Powder, 2tsp Red Chilli Powder and then mix it well and then add 1/4 cup corn kernels, 2 medium carrots cuted into diamond shape, and then add 16-18 Cauliflower Florets, 5-6 French Beans cuted into pieces, Salt to Taste, mix it well.

5. Now add 2-3 tbsp Yoghurt and mix it well and then add 1/2 cup Green Peas and then mix it well and cover it with lid and let it cook come until it gets soften texture.



6. Now strain the rice that are present in 2nd deep pan, and mix the rice with 1tbsp Ghee, and now take out the half Vegetables from the 1st deep pan and then add 1tbsp Chopped Fresh Coriander Leaves to the remaining Vegetables and then mix it well and then add 1tsp Garam Masala Powder and then cover it with first layer of cooked rice and then 1/2 cup fried onions, some fresh Mint Leaves as required, 1/2tsp Garam Masala Powder, and then add 1tbsp Saffron Milk.



7. Now add the Vegetable that we have taken out before and then again add or cover it with remaining cooked rice and then again add 1/4 cup Fried Onions, Fresh Mint Leaves as required, 1/2tsp Garam Masala Powder, 1tbsp Saffron Milk and also add few drops of screwpine essence (Kewra), few drops of Rose Water and cover it with lid and let it cook at low flame until it done completely.














8. Finally our Homemade Vegetable Biryani Recipe is ready to serve.
