Hello Foodies, Welcome to our site Checkmyrecipe.com , Today you will learn that how to make rasmalai at home step by step with picture, This is so easy and yummy Homemade Step by Step Recipe of Rasmalai , which is very famous in India,Rasmalai, often called Rasaw malai in Odisha or rossomalai in West Bengal, is an Indian dessert believed to have originated from the eastern part of the country although it cannot be confirmed.It has been described as "a rich cheese cake without a crust".It is considered to be a variation of the rasgulla in which syrup is replaced with thick milk. So let's follow the following steps that How to make Rasmalai at Home :-

FOR HOMEMADE RECIPE OF RASMALAI
INGREDIENTS REQUIRED

1 Liter Milk(Toned Milk)
2 tbsp Vinegar/Lemon Juice
2-3 tbsp Water
1/2 tsp Corn Flour
2 cup Sugar
6 cup Water
10-12 Ice Cubes
1/2 Liter(500ml) Milk for Rabdi
Few Strands of Saffron (Kesar){Buy Now}
1/4 tsp Cardamom Powder
Little bit chopped Pistachio(Pista Badam)
1/2 cup or 100gm of Sugar


METHOD OF PREPARATION

1. Place the wok on the stove, switch the flame on and then add 1 Liter milk to it and i am using toned milk for this Rasmalai Recipe and let it boil.





Note :- If you are using full fat milk then boil it set it at Refrigerator for about 7hr and then separate the cream from this which will come up on the surface of milk and then again use it further by boiling it.

2. Now when it get's boiled then take a bowl and 2tbsp Vinegar and similarly add 2tbsp of Water to it and mix it well and then adding it in the boiled milk slowly slowly with continuously stirring it and then you can notice that solids(channa) are separated from the whey.









3. Now cool this by adding ice cold water to it and then take a big bowl and place the sieve on this and then place the Muslin Cloth to it and then add the solid(channa) whey Mixture to pass through this and then wash it with cold water as shown in picture.








4. Now squeeze this channa along with muslin cloth as shown in picture so that all the liquid(whey) separated from this properly and place this aside for 10-15 minutes.



5. Now For Rabri(Rabdi), Take a Wok and then add 500ml of milk to it and then add few strands of Saffron, 1/4tsp Cardamom Powder, Little bit of chopped Pistachio Almonds and add little bit of kesar Color which is optional and let it boil and when it gets boiled then Switch the flame low and then boil it for 5-6 minutes with continuously stirring it.








6. Now add 100gm of Sugar to this and boil it for more 3-4 minutes so that it becomes little bit thicker in texture and finally our Rabdi is ready for further use.





7. For Chashni (Sugar Syrup), Take a wok and then add 2 cups(400gm) of Sugar to this and then add 6-7 cups(1.5Liter) Water to this and mix it well and let it boil.


8. While the sugar syrup is started to boil in the mean time check your channa and place the channa(solids) on the plate and then mash it with your palm or hand it it dry in texture and mash it well so that it becomes smooth in texture as shown in picture and then add 1/2 tsp Corn Flour which is also optional to add and then mi it with it by mashing with your hands and our channa is ready and divide it into the small parts of balls.








9. Now take one prepared ball and place it between your hands and then press it so that it becomes circle type texture as shown in picture.




10. Now add this prepared flatten channa pieces into the boiled sugar syrup (Chashni) and cook it for about 15 minutes at medium flame and flipping it so that it cooks from both sides and then switch the flame off and let it cool as it it in the wok for 10 minutes.






12. Now take a big bowl and then add 10-12 ice cubes and then pour or add the prepared sugar syrup(chashni) to this so that it cool properly and then add Flatten channa rasgula to it and keep it aside for at least 30 minutes.






13. Now take one flatten rasgula(channa) pieces from the Chilled bowl of syrup and press it between your palm so that all the syrup removed from it and then add this into the prepared rabdi similarly repeat the procedure for other flatten channa(rasgula) pieces and keep it aside for at least 4hrs so that it properly soaked the rabdi so that better Rasmalai recipe will made from this timing period.
