INGREDIENTS REQUIRED

6 Chicken wings ( serves 1 lollipops dozen) Marination
1 tbsp Ginger-Garlic paste Salt as required
1/2 tsp Black pepper
1 tbsp Soy sauce
Oil for deep frying
For batter
2 tbsp Red chilli powder 1/2 cup Refined flour
2 tbsp Cornflour
Salt as required
1 no Whole egg
Water as required
Spring greens for garnishing
Aluminum foil
➡️ Sachezwan Sauce for serving

PROCEDURE OR METHOD
For Chicken Winglet

1. Convert the chicken wing into a lollipop , i have taken the entire wing along with the winglet now this is into three parts it has shoulder, wing, & winglet, so let's see what to do first thing is checking the joint and discard the Winglet, then separte the joint and now it is divided into two parts. The first part is the wing



2. The wing has two bones thicker one and thinner one, so touch it and feel it, so run the knife in between the bones and separate the two bones now run knife around the thinner bone and with firm grip clean the bone properly. Check the Picture for more understand.









3. Bring the flesh in by pusing it out.



4. Follow the same procedure with the thicker bone




5. Roll the flesh and convert it into a ball


For Chicken Shoulder
1. Find the single thick bone and run knife around the bone and separate the meat from the bone and roll it into a ball of meat






2. Now time for marination, Add the chicken into bowl then add soy sauce, ginger garlic paste, crushed black pepper and salt and mix it properly & let it rest for 30-45 minutes.


3. In a bowl add corn flour, refined flour, chilli powder, salt, one egg and whisk it properly and add water to make thick batter.



4. Heat the oil and now dip the lollipop into the batter and drop it into the oil





5. Fry the lollipops until they cook well and now the starter chicken lollipop is ready to be served.

6. Cover the bones with aluminum foil and cut the some spring greens and garnish it with spring onion.
