    WHAT IS GULAB JAMUN

    Gulab Jamun is milk solid based sweet feom the Indian subcontinent and a type of mithai.

    It is made mainly from milk solids traditionally from khoya(khoa) which is milk reduced to the consistency of a soft dough

    INGREDIENTS REQUIRED



    Milk 1/2 cup /120ml
    Ghee -1/4 cup / 60g
    Milk Powder-1 1/2 cup /150g
    Sugar 3 cups
    Water 1 cup
    Milk 2 tbsp
    Saffron few strands
    Gulab Jal / Rose Water 1/2 tsp Cardamom Powder 1/4 tsp
    Mawa/khoa cooled, looks great
    Maida/Wheat Flour 4 tbsp
    Cardamom powder
    Baking Powder 3/4 tsp
    Water 3 tbsp
    Ghee to deep fry

    METHOD OR PREPARATION



    KHOA PREPARATION

    1. First Take a non stick big bowl and add 1/2 cup milk to it , 1/4 cup ghee, 1.5 cup milk powder & mix it completely.




    2. Now turn on the flame, keep the flame medium and cooking it by stirring continuously for 4-5 minutes.

    Now you can see in the below picture, it is looking like mawaa or soft texture, if you don't stirring it or if you keep it on it , it will burn so stirring it continuously.






    3. After stirring it for 5minutes, our mawa or khoa is ready , now keep it aside for cooling at room temperature.

    Syrup Preparation 


    4. Take a big pan or bowl & add 3 cup or 600g sugar to it & add 200g water to it , keep the flame medium and stirring it for making sugar syrup.

    I am using large amount of sugar for syrup because for completely mixing of gulab jamun with this sugar syrup and gulab jamun will absorb proper amount of syrup in it.




    5. Now you can see the colour of the syrup is dull so for making clear to it we have added the 2tbsp milk & mix it then let it to boil for 2-3minutes.







    6. Now you can see all the dullness or dirtiness have came up with the help of adding milk,

    Now then remove it with the help of big spoon which have some pores in it like in the below picture.

    You can also use tea strainer for removing this white portion from syrup.


    7. Now see the syrup is clear & looking great & now add Saffron few strands for good flavour, Gulab Jal / Rose Water 1/2 tsp, add Cardamom powder 1-2tbsp

    Mix all this with the syrup completely & cook it for 2-3minutes.





    Syrup is Ready

    8. Now our sugar syrup is ready and cover it lid and keep it aside.

    9. Now our mawa or khoa has been cooled down at room temperature that we have prepared in 3rd step, add 4 tbsp Maida or wheat flour, Cardamom powder , 3/4tsp Baking Powder, & mix it properly with your hands

    Now add 1/2 tbsp rose water , 3big tbsp water to it & then again mix it properly with your Clean hands.







    10. Now place this mawa or khoa mixture on big plate , we are using big copper plate & massage it with your hands for 3-4minutes.




    11. Now our gulab jamun's dough is ready as you can see in the below picture & Divide it into small 16 pieces , you can make 16 medium gulab jamuns from this dough.


    12. Now place one piece of dough between your hands and make into balls & similarly make another gulab jamuns balls.





    Frying of Gulab Jamun 

    13. Take wok or kadai then add ghee for deep frying , add the prepared gulab jamuns balls to the kadai and keep the medium flame

    Now fry it continuously until it becomes golden or pinkish in colour as shown in the below picture. This procedure takes upto 10-12minutes





    14. Now Immediately take out the gulab jamuns from the ghee & immediately put all these prepared gulab jamuns into the prepared sugar syrup

    And completely dip all gulab jamuns in the syrup so as gulab jamuns completely absorb the syrup in it.




    15. When gulab jamuns are settled down in the syrup that means it has completely absorb the syrup in it ,

    For better taste of gulab jamun keep these gulab jamuns in syrup for minimum 2hrs, now our Gulab Jamuns are ready to serve.
