How to make Schezwan Sauce at Home

INGREDIENTS REQUIRED

100 gms dry red chillies
50 gms kashmiri/bedki red chillies
7-8 tbsp oil
1/2 cup finely chopped garlic
4-5 tbsp finely chopped ginger
salt
1tsp soy sauce
1 tsp sugar
3 tbsp vinegar
2-3 tbsp tomato sauce


METHOD OF PREPARATION

1. Take 100gm dry Red Chilli for spice and 50gm Kashmiri/bedki red Chillies for colour, I am using two type of red chillies but you can also use one type of red chilli.



2. Now add these Chillies to the water so that it gets soaked easily , soak it into the water for 20-30 minutes.



3. Now boil these Chillies along with water for 4-5 minutes and then keep the flame on low to medium flame and cover it with lid and let it pressure boil for 2-3minutes.



4. After boiling it will attain soft texture and then switch off the flame and then again cover it with lid and let it cool at room temperature.



5. Now transfer these boiled Chillies to the blender to make the paste.



6. Now Heat the 6-7tbsp oil in the wok after heating this oil keep the flame on medium flame and then add 1/2 cup finely chopped garlic as shown in the picture and then add 4-5 tbsp finely chopped ginger and fry or cook this for 2-3 minutes on medium flame until it become light golden brown make sure that this should not dark otherwise sauce will be bitter in taste and also will be charge in colour.






7. Now add the red chilli paste to this and also the water of red chilli paste or simple water about 2-3tbsp to this wok and cook it well properly and again cover it with lid & cook it for 5-7 minutes at low to medium flame or cook it until it doesn't leave out oil from sides.






8. Now remove the lid & add salt to taste, 1tsp soy sauce, 1tsp sugar, 3tbsp vinegar,2-3tbsp tomato sauce and then mix all these well Properly and again cook it for 1-2 minutes.












9. Now switch off the flame and our Homemade Schezwan Sauce Recipe is ready, Put these Schezwan Sauce into the air tight container and enjoy this schezwan sauce.
