For Homemade Malai Paneer Recipe
INGREDIENTS REQUIRED

2 Liter Milk (Full Fat)
200 ml Cream{Buy Now}
1tsp Citric Acid/Lemon Juice/Vinegar/Curd
2 Liter Ice Cold Water


METHOD OF PREPARATION

1. Take a wok(kadai), heat it then add 2 Liter full fat Milk(Whole Milk), Heat it at high flame and then add 200ml of Fresh Cream,Cream will make the paneer more softer so that's why we are saying this malai paneer recipe.


2. Now stir this and bring this to a boil and make sure keep stirring the milk every once in a while because there are high chances that milk can stick and burn and once it gets good boil then lower the flame and cook it for another 5 minutes and then switch off the flame and cool it at room temperature for curdling , if you curdle the milk hot then it's texture will be hard so cool down it first by adding 1 cup of Ice Cold Water and for every 2litre of milk use 250ml of cold water.







3. For curdle the milk, you can use lemon juice, vinegar, curd(dahi) but today we are using citric acid so Now take 1tsp Citric Acid in a small bowl and add 4-5 tbsp of water to it and keep it aside for about 5 minutes, so that it dissolves naturally and then add little bit at a time into the milk and then curdle the milk.




4. Now you can notice the there will be small formation in the milk and the milk will curdle slowly and the milk has separated into curdles and whey, the whey is in green color and immediately cool the paneer by adding some ice cold water if paneer stays hot for too long it will be stiff.




5. Now take a big bowl and place the strainer on it and on top of this use muslin cloth and strain the paneer by adding all of this.




6. Now carefully squeeze out the paneer and most of the water and whey is out from this and change the bowl or get rid of this whey and then wash the paneer by adding lot's of ice cold water and wash it with your hands by mixing it and if you don't wash this paneer then your paneer can be sour and again squeeze out all of the extra water by pressing it.










7. For proper squeezing make the set up like place the perforated plate on bowl and then use round shape utensil that is the reason here i am using a ring cutter in round shape, it is totally optional to use this and then place the paneer on top of this and then shape it as round shape by pressing it down and add more weight on it by placing sauce pan and add the water in the sauce pan which will give good press or weight on it and keep it aside for about 2-3hrs.








8. Finally our Homemade Malai Paneer is Ready, Remove the sauce pan, Ring Cutter, and then cut it into your desired shape.
