For Bharli Vangi Recipe 

INGREDIENTS REQUIRED 


9 Brinjal small 

1/4th cup Peanuts

1 tsp Cumin Seeds

2 tbsp Sesame seeds

3 tbsp sliced Dry Coconut 

1/2 tsp Turmeric Powder

1 tsp Red Chilli Powdee 

1 tbsp Goda Masala

1/2 tsp Salt

3 Cloves of Garlic

1 inch Ginger

Small piece of Tamarind

3 tbsp Coriander

1 finely chopped Onion

2 tbsp Oil

1 tsp Mustard Seeds

1 tsp Cumin Seeds

Pinch of Hing (asafoetida)

1/4 tsp Turmeric

1/2 tsp Red Chilli Powder

1 finely chopped Tomato

1 cup water

1/2 tsp Salt

1/2 tsp Jaggery

METHOD OF PREPARATION 


1. Take small 9 Brinjal and slit it in centre like x mark as shown in image with the help of knife and keep all these brinjal in water. 







2. Take a pan and add 1/4th cup Peanuts and roast it at low flame with continuous stirring it so that skin separates from the peanuts.

And peel this skin of peanuts.






3. Now add 1 tsp Cumin Seeds, 2 tbsp Sesame seeds, 3 tbsp sliced Dry Coconut and roast these all at low flame till turns aromatic. 

Let it cool at room temperature. 








4. Now add all these roasted ingredients into the grinder jar and then add 1/2 tsp Turmeric Powder, 1 tsp Red Chilli Powder, 1 tbsp Goda Masala.






5. Then add 1/2 tsp Salt, 3 Cloves of Garlic, 1 inch Ginger, small piece of Tamarind, 3 tbsp Coriander.








6. Now close this grinder jar and grind it to obtain coarse masala powder as shown in picture and add this into the pan.







7. Then add 1 finely chopped Onion, and mix it well with your clean hands and finally our Masala Stuffing for brinjal is ready.






8. Take the brinjals that we have cuted into x mark and stuff it with the prepared masala as shown in image.








9. Now heat the pan and then add 2 tbsp Oil, 1 tsp Mustard Seeds, 1 tsp Cumin Seeds and pinch of Hing (asafoetida) and saute it well.








10. Add 1/4 tsp Turmeric, 1/2 tsp Red Chilli Powder and saute it well at low flame till it turns into aromatic.







11. Now add leftover stuffing into this and saute it for 2 minutes till it turns into aromatic. 






12. Add 1 finally chopped Tomato, saute it and then add stuffed brinjal into this mixture and saute it for 1 minute and make sure that not to break the brinjal.









13. Now add 1 cup water, 1/2 tsp Salt, 1/2 tsp Jaggery and mix it well.










14. Cover it with lid and cook it for 10 minutes and then you can check oil is separated from this and it is cooked completely.
