For Ragda Recipe for Pani Puri 

INGREDIENTS REQUIRED 


1.5-2 cups White Watana (Soaked in water overnight)

1 diced Potato

3 cups of water

1 tsp Salt

Turmeric Powder as Required 

1 tbsp Oil

1 tsp Cumin Seeds

Pinch of Asafoetida(Heeng)

2 -3 finely chopped Green Chillies

1-2 tsp Crushed Ginger Garlic or it's paste

1 Big Chopped Onion

2 chopped Tomatoes

1 tsp Salt

Pinch of Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Coriander Powder

1/2 tsp Cumin Powder

1/4 tsp Garam Masala Powder




METHOD OF PREPARATION 


1. Take 1.5-2 cups White Watana (Soaked in water for overnight).





2. Now transfer this in a pressure cooker, add 1 diced Potato into it.





3. Now add 3 cups of water, 1 tsp Salt, little amount of Turmeric Powder and mix it well.









4. Cover this with lid and pressure cook it for 3-4 whistles and when it's done wait for releasing all steam from this cooker.





5. Now open the pressure cooker and now you can see that all this mixture is cooked and boiled completely,

And then mash it lightly with the spatula or masher so that it's consistency will be good in texture. 





6. Now take a pan and add 1 tbsp oil and when it gets hot then add 1 tsp Cumin Seeds, pinch of Asafoetida(Heeng).






7. Add 2 -3 finely chopped Green Chillies, 1-2 tsp Crushed Ginger Garlic or it's paste and cook or fry(saute) this 20-30 second.







8. Now add 1 Big Chopped Onion to this and cook it for 2-3 minutes or until it becomes light golden brown in colour. 






9. Add 2 chopped Tomatoes, 1 tsp Salt and cook it for 1 minutes or until it becomes soft in texture. 







10. Add pinch of Turmeric Powder, 1 tsp Red Chilli Powder, 1 tsp Coriander Powder, 1/2 tsp Cumin Powder, 1/4 tsp Garam Masala Powder,

And mixing it properly and cook this for 1 minutes more with mixing.









11. Now add Boiled Watana and Aloo(Potato) and cook this also for 1-2 minutes with continuous mixing. Let it Boil in this at medium flame 5-6 minutes.







12. Now Finally our Homemade Ragda Recipe for Pani Puri is Ready to Serve hot, add half lemon juice with freshly Chopped Coriander and mix this well.

13. For Ragda Chat, take 1 full spoon of ready ragda in the plate, add 1 tsp chilled sweet curd, 

Add 1 tsp Green Chutney, 1 tsp Imli Chutney, little bit chopped onion and tomato and half chopped green chili, add pinch of red chilli powder and Cumin Powder and little amount of chopped coriander and finally ragda chat is ready.

14. For Ragda Puri, Take one puri and little amount of this prepared ragda, pinch of green chutney, little bit chopped onion & tomato, pinch of red chilli powder and finally ragda puri is ready.
