INGREDIENTS REQUIRED
1.5 to 1 OR 3 quarter pounds of steak
2 tsp of Kosher Salt
1 tsp Sugar
1/2 tsp of Black Pepper
2 tbsp vegetable oil
2 tbsp unsalted softened butter
1 tbsp of minced chives
2 tsp of dijon mustard
1/2 tsp of grated lemon zest
1 tsp of lemon juice

METHOD OF PREPARATION
1. Take 1.5 to 1 OR 3 Quarter pounds of steak.
2. Cut it into 4 piece as you can see in the Photo Tutorial Guide.
3. Now take some paper towel and just pat it dry.
4. Then season it with 2 tsp Kosher Salt, 1 tsp Sugar, 1/2 tsp Black Pepper, rub this on all sides of steak.
5. Transfer this to a rimmed baking sheet, i put a wire rack right on there, it's going to elevate the steak, so that some heat can get underneath them and also help them to cook.
6. Insert the probe into the one of the steak and place the meter outside of the oven and place this sheet containing steak in the low oven for baking and when it will reach at 120 degrees then take it out from the oven, Check the Photo and Video Tutorial Guide Below for Better Understanding.
7. Now it's time to searing it in the pan, heat the 2 tbsp vegetable oil in the pan over medium high heat.
8. In the meantime, Take a bowl and add 2 tbsp unsalted butter softened, mash it little bit with rubber spatula before adding other ingredients.
9. Now add 1 tbsp of minced chives, 2 tsp of dijon mustard, 1/2 tsp of grated lemon zest, 1 tsp of lemon juice and mix it well properly and finally our compound butter mixture is ready and set it aside.
10. Let's back to the skillet and when the oil gets hot then add steaks after oven into this pan and flip them every minute and that's to ensure that they don't overcook and to develop a really nice brown crust.
11. After passed the first minute, we are gonna go ahead and flip these over at every minute until it cooked well and attain good brown colour as you can see in the image in the Photo Tutorial Guide below.
Note :- Flank Steak has long muscle fibers that shrink up when they come in contact with a hot pan which causes the steak to buckle once, the steak is buckled it's no longer flat then that means you won't get even browning.
By flipping the need every minute the muscle fibers on both sides of the steak shrink at the same rate thereby reducing the buckling effect.
12. Then take it out from pan and let it cool for about 10 minutes, so we can eat them and also it's just going to allow any juices in the meat to redistribute.
