INGREDIENTS REQUIRED 

4 lbs Yukon Potatoes, peeled and quartered

6 cloves garlic, minced or crushed

1 1/3 cups whole milk 

1.5 tsp salt or to taste

8 tbsp unsalted butter softened 

1/4 cup sour cream optional

2 tbsp chives to garnish


METHOD OF PREPARATION 

1. Peel the yukon potatoes, add it into the cold water and cut it into halves or quarter.


2. Drain the water and add this chopped potatoes in the stainless steel pot.


3. Add enough cold water to the pot to cover the potatoes, bring that to a boil, then reduce the heat to a simmer and continue cooking for about 15 to 18 minutes or until your potatoes are easily pierced with a fork.

This can take more or less time, depending on how large you cut up your potatoes.


4. When your potatoes are close to being done, peel and smash 6 garlic cloves, then transfer it to the small saucepan.


5. Add 1 1/3 cups of whole milk because whole milk add some richness to the potatoes, but you can use any kind of milk.


6. Place that saucepan over medium low heat, stirring occasionally, and continue cooking just until you see steam then take it off the heat.

You don't wanna boil the milk.


7. When potatoes gets boiled then drain all the water from it and if they seem very moist to you then you can place them over very low heat on the stove while you are mashing.


8. Now mash the potatoes with the potato masher or electric hand mixer.

Make sure potatoes are hot while mashing because it helps to prevent the potatoes from turning gummy.


9. Addt1 1/3 cup of steaming hot garlic milk (to your desired consistency) by straining it with small strainer to make sure the garlic cloves doesn't pass from it.


10. Continue mashing the potatoes with the help of hand electric mixer until they are fully smooth and creamy.

Also use the spatula to scrape the sides and bottom of the pot, to make sure you didn't miss any chunks of potatoes.


11. Now add 8 tbsp of unsalted softened butter, 1/4 cup of sour cream, 1.5 tsp of salt or salt to taste and mash it again with hand electric mixer.


12. Once it is whipped and creamy, it is done and it's time to serve and add it into the serving bowl, garnish it with softened butter, freshly chopped chives
