INGREDIENTS REQUIRED 

2 large russet potatoes

6 strips thick cut bacon

1 rotisserie chicken (2-3 cups diced chicken -boneless and skinless)

2-3 tbsps melted butter

1/2 cup sour cream

1/2 tbsp ranch seasoning 

1/4 cup ranch dressing

Salt, Pepper, Garlic, onion Powder to taste

1/4 cup diced green onion

1-2 cups shredded cheese (mozzarella and colby jack or use your favorites)



METHOD OF PREPARATION 

1. Preheat the oven at 425°F, layout some aluminium foil on a baking sheet and then place the bacon on it and bake it in the oven,

But you want to flip it every few minutes until it nice and crispy.


2. Take rotisserie chicken breast meat (boneless, skinless or no cartilage, chop it well, it is about 2 to 3 cups of chopped chicken.


3. Take russet potatoes, wash it and clean it with the help of paper towel,

Then poke some holes in the potato with the help of fork, to allow some steam to escape so that no any explosion of potatoe occur,

Microwave it at 400°F or until it is nice and tender.


4. Dice the bacon into bite sized, if you don't like pork bacon then you can use turkey or beef for this recipe.


5. When potatoe is finally baked then slice the top off as you can see in the image below,

Let it cool down so that your hands doesn't burnt. 


6. When it cools down, then use spoon to scoop out the inside of the potatoe and add into the mixing bowl and make some mashed potatoes.


7. Now add 2 to 3 tbsp of butter and mash it with the help of potato masher.


8. Then add all purpose seasoning in it and also seasoning in the potatoe as well.


9. Now add 1/2 cup of sour cream, 1/4 cup of ranch dressing, 1/2 tbsp of ranch seasoning as well.


10. Add 1-2 cups shredded cheese (mozzarella and colby jack or use your favorites) and shredded bacon, 1/4 cup diced green onion,

Mix it well, them add 2 to 3 cups of diced rotisserie chicken and mix it well, Finally our stuffing is ready.


11. Preheat the oven at 375°F, Now add some shredded cheese at the bottom of the empty potato, add the prepared stuffing and add little bit seasoning in it.


12.Now again add some shredded cheese on it and then bake it at 375°F for about 15 to 20 minutes or until the cheese is golden brown.


13. Then top it with little bit of sour cream, garnish it with chopped bacon and chopped green onion.


14. Finally our Loaded Baked Potato Recipe is ready to serve.
