4 eggs, boiled

1 finely chopped onion

2 tomatoes, chopped finely

2 green peppers, cut finely

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1-tablespoon turmeric powder

1 teaspoon red pepper flakes

1 teaspoon dried coriander

Garam masala powder, 1 teaspoon

Salt, as desired

1. Oil should first be heated in a pan over medium heat. Add the cumin and mustard seeds to the heated oil and let them sputter for a few seconds.

2. Green chilies and chopped onions should be added, and the onions should be sautéed until transparent.

3. The diced tomatoes are now added, along with salt, turmeric, red chili, and coriander powders. Mix thoroughly, then allow to cook until the tomatoes are mushy.

4. Mix thoroughly after adding garam masala powder.

5. Boil the eggs, then add them to the pan and sprinkle the masala over them. Stirring sporadically, cook for 2-3 minutes.

6. The curry leaves should then be added to the pan and thoroughly mixed. Before serving, turn off the heat and give it some time to rest.
