To make the vada:

4 boiled and mashed potatoes

1 finely chopped onion

2-3 finely chopped green chilies

1 tablespoon ginger-garlic paste

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 tablespoon turmeric powder

1 tablespoon coriander powder

1 teaspoon garam masala

Season with salt to taste

2 tablespoons oil

Filling for the cheese bursts:

1 cup shredded cheese

2-3 tablespoons mayonnaise

1 teaspoon garlic powder

To put it all together:

8 patty buns

4-5 tablespoons green chutney

4-5 tablespoons tamarind chutney

Toasted buns with butter


METHOD OF PREPARATION 

1. Heat the oil in a pan and add the mustard and cumin seeds. When they begin to sputter, add the chopped onions, green chilies, and ginger-garlic paste. Cook until the onions are golden brown.

2. Mix in the mashed potatoes and all of the spices. Cook for 2-3 minutes after thoroughly mixing. Remove from the heat and set aside to cool.

3. In a mixing bowl, combine grated cheese, mayonnaise, and garlic powder to make the cheese burst filling.

4. Flatten a small portion of the potato mixture in your hand. Fill the centre with a spoonful of the cheese filling and roll it up to form a ball.

5. In a large frying pan, heat the oil. When the oil is hot, drop the potato balls in and fry until golden brown.

6. Cut the pav buns in half and toast them in a hot pan with butter.
