For Homemade Malai Kofta Recipe
INGREDIENTS REQUIRED

For Yellow Base Gravy
2tbsp Khus Khus(Poppy Seeds) {Buy Now}
2tbsp Magaz(Melon Seeds) {Buy Now}
20 Cashewnuts
500ml of Water
Wok(Kadai)
2-3tbsp Oil
2 Cardamom (Elaichi)
2 Cloves(Laung)
1tsp Black Pepper
1 Bay Leaf(Tej Patta)
3 Large Onions
1tsp Salt
1tsp Ginger Garlic Paste
1tsp Coriander Powder
1/2tsp Red Chilli Powder
1/2tsp Garam Masala
2 Chopped Green Chilli
1tbsp Turmeric (Haldi)
2 Large Tomato
For Kofta
130g Cottage Cheese (Paneer) Grated
3 Boiled Peeled Mashed Potatoes
2tbsp Condensed Milk or (1/2tbsp Sugar)
Salt to Taste
1/4tsp Cardamom Powder
1/2tsp Kasoori Methi
1tsp Chopped Fresh Coriander
15-20 Raisins
1/4 cup of Corn Flour
Oil to Deep Fry
1tbsp Oil/Butter
1tsp Kashmiri Red Chilli Powder
1 cup Water(to adjust)
2tbsp Condensed Milk (else, add sugar 1tsp)
2tbsp Fresh Cream


METHOD OF PREPARATION

1. Take a sauce pan and then add 2tbsp Khus Khus(Poppy Seeds), 2tbsp Magaz(Melom Seeds), 20 Cashewnuts, 500ml of Water and then let it boil at high flame and when it gets boil then boil it at low flame for 5-6 minutes, when the water decrease during boiling then add water to it and then keep it aside.






2. When it's temperature cool down then remove the water from it and add these nuts into the grinder jar also add 2-3 ice cubes and some amount of water and make it into the fine paste or smooth paste and finally our nuts paste is ready.







3. Now take a wok and then add 2-3tbsp Oil and when it get's hot then add 2 Cardamom, 2 Cloves, 1tsp Black Pepper, 1 Bay Leaf and cook it for few seconds.

Now add 3 Large Chopped Onions, 1tsp Salt and cook it for 3-4 minutes till it becomes pink in Colour and then add 1tsp Ginger Garlic Paste and then cook it for for 1 minutes and then add masalas like 1tsp Coriander Powder, 1/2tsp Red Chilli Powder, 1/2tsp Garam Masala, 2 Chopped Green Chilli and also add 1tsp fresh Chopped Coriander, 1tbsp Turmeric and roast it for 1-1.5 minutes and make sure that it doesn't burn.












4. Now add the Prepared nuts paste that we have prepared in 2nd step and then cook it for 2-3 minutes by continuously stirring it so that it doesn't burn.




5. Now add 2 Large Tomato(medium chopped) and cook it till the tomatoes cooked properly, it takes usually 2-3 minutes and continuously stirring it and finally our thick base is ready and switch off the flame and keep it aside for cooling at room temperature.



6. For Kofta, Take a big plate as shown in picture and then add 130g grated paneer and mash it properly with your hands for about 2 minutes.


7. Now add 3 Boiled Peeled Mashed Potatoes and mix it well with paneer with your hands and then add 2tbsp Condensed Milk or (1/2tbsp Sugar), Salt to Taste, 1/4tsp Cardamom Powder, 1/2tsp Kasoori Methi, 1tsp Chopped Fresh Coriander and again mix it well and our kofta Mixture is ready.









8. Now make small balls of it as shown in picture and shape it with your hands and make small space in the center of ball as shown in picture and add 2-3 piece of raisins to it and again cover it or roll it with your hand to make it into ball shape and coat it with corn flour properly and similarly make another koftas like this and keep it aside for 5 minutes for rest.








9. Now take a thick base mixture that we have prepared in 5th step and remove the bay leaf from it and you can also remove the Cardamom from it as your wish and then add this thickened mixture to the grinder jar and add the water into the wok to scrape the mixture that have attached to the wok and then add to the grinder jar as done in picture and make smooth gravy of this.






10. Now strain this prepared gravy with the help of sieve which is placed on the bowl as shown in picture so that to remove the skin of Tomato if any present.



11. Now for tadka, take non stick wok and then add 1tbsp oil or you can also add butter to it and then add 1tsp Kashmiri Red Chilli Powder and then add prepared gravy to it by straining through the sieve again so that it becomes silky and more smoothly as shown in picture and continuously stirring it and add 1 cup of water to adjust the texture of this gravy.









12. Now add 2tbsp Condensed Milk and 2tbsp Fresh Cream to it or if you are adding malai to it then add some sugar to it for Sweetness and then let it boil or cooked on low or medium flame and finally our gravy is ready.









13. Now deep fry the prepared kofta in the wok till it becomes golden brown in colour and then finally our kofta is ready and our kofta is super soft because we haven't used any binding agent into it.


14. Finally our Homemade Malai Kofta Recipe is Ready to Serve and take a serving plate and then add gravy to it and then add kofta to it and again pour the gravy on the kofta as done in picture.
