For Homemade Mexican Tacos Recipe
INGREDIENTS REQUIRED
For Arancini Bean Patty
1/2 cup Red Kidney Beans/Rajma Sharmili{Buy Now}
Salt to Taste
1.5 cup Overcooked Rice
1tsp Roasted Cumin Powder
1/2tsp Black Pepper Powder
1/2tsp Salt
1tsp Red Chilli Powder
1 Finely Chopped Green Chilli
1tsp Red Chilli Flakes
1tbsp Lemon Juice
1tbsp chopped Coriander
1/2 cup Plain flour/Maida
1/2 cup Corn Flour
Water to make batter
1 cup Bread Crumbs
Oil to shallow fry patty
For Harissa Dressing
2 cups of Water
15 Whole Dried Red Chillies
1/2tsp Shahi Jeera/cumin{Buy Now}
4-5 Garlic Cloves
Salt to Taste
1tsp Lemon Juice
2tbsp Olive Oil
1tbsp fresh Coriander
2tbsp Water
3/4 cup of Mayonnaise to make a dressing out of paste
To Assemble & Cook
5 Half Cooked Lachha Paratha{Buy Readymade}
1tbsp Mexican Seasoning{Buy Now}
2tbsp Chopped Coriander
1/4 cup Cheese(optional)
1/4 cup Butter to Coat/cook

METHOD OF PREPARATION
1. Take 1/2 cup of Sharmili Rajma in a bowl and soak it for overnight and next day you will notice that it will be double in volume/size.

2. Now add this Rajma(beans) into the pressure cooker along with some water as well as some salt and cover it and Pressure cook it at high flame for 5 whistles and after that lower the flame and then cook it for 10 minutes more.
3. Now for Harissa Paste, it is a type of Red Chilli Paste, Take a sauce pan and add 2 cups of water, 15 Dried Red Chillies and then bring it to the boil after the boiling lower the flame and cook it for 5 minutes more and then switch the flame off and cool it at room temperature and then remove the stems of these and then add these into the blender jar along it with add 1/2tsp Shahi Jeera, 4-5 Garlic Cloves, Salt as per Taste, 1tsp Lemon Juice, 2tbsp Olive Oil, 1tbsp Chopped Coriander and 2tbsp Water and make the paste of this and you can also add some more chopped coriander and blend it again to make this paste and our Harissa Paste is ready keep it aside.

For Arancini Bean Patty, Now Open the Pressure cooker after removal of all steam from this and then strain this Red beans with the help of sieve and then add 1 cup of this Sharmili Rajma in the Mixing bowl and then add 1.5 cups of overcooked Rice to this and mix or mash it well with your hands properly.
5. Now add the spices like 1tsp Roasted Cumin Powder, 1/2tsp Black Pepper Powder, 1/2tsp Salt, 1tsp Red Chilli Powder, 1 Finely Chopped Green Chilli, 1tsp Red Chilli Flakes, 1tbsp Lemon Juice, 1tbsp chopped Coriander and mix it again with your hands properly so that rice is covered with all these Spices.
7. Now For Batter, Take a bowl and then add 1/2 cup Plain flour/Maida, 1/2 cup Corn Flour and add little amount of water and mix it to make a smooth paste and our batter is ready.
8. Now take the patty that we have prepared in 5 & 6 step and then covered it with the prepared batter mixture and after that covered or coat it with breadcrumbs with your hand from all sides.
9. Now take 3/4 cup of Mayonnaise and then add 1-2tbsp of Harissa Paste to this that we have prepared in 3rd Paste and mix it well properly and our dressing is ready.
10. Now shallow fry these coated parties to the Frying pan and keep the flame medium and fry them for about 2-3 minutes each sides and when it looks golden then transfer this patties on the kitchen towel and finally our Patties are ready.

11. For Lachha Paratha, i am using readymade lachha paratha for this, if you are making Homemade lachha paratha then half cooked from both sides and then add some dressing that we have prepared in 9th step and spread it evenly.

12. Now add 1tbsp Mexican Seasoning which is optional then add 1/4 cup of grated Cheese and then place the prepared 2 Patties on it and then flip this over and flip it upside again as shown in picture otherwise your taco shell might open up while you cook it and similarly make more taco like this.
13. For Tawa Method, Take tawa, heat it and then add 1tbsp Butter and when it get's hot then place the taco top on it and cook it at medium flame till the bottom is golden and once it is golden flip it over and cook it till it is golden in colour as well and at the end cook it's side so that it stands really well for this to cook it side hold it with any tongue or any tool in the kitchen which can help you as shown in picture and before it serving sprinkle it with some mexican seasoning and fresh coriander.

14. For Oven Method, Take the oven tray and apply some butter generously to it and then place the taco on it and apply some more butter and the oven it preheated at 200°C in bake mode and place the tray inside the oven and cook it for 10 minutes at 200°C make sure that keep both the rods on bottom and top.
