Today you will learn also a new mixing method which is the biscuit mixing. Now This biscuit  mixing method is used to make classic flaky biscuits as well as classic Fluffy biscuits and scones and The purpose of this method is to create really flaky texture in our baked good.

In this biscuit mixing method we are wanting to create a really light and tender texture but we also want to create some flakiness in our baked good.

Now the way we accomplish this really depends on the way in which the fat is worked into our dough and we are going to be working with cold solid fat for this mixing method in contrast to room temperature liquid fat which we use in the muffin mixing method.

Now to demonstrate this method for you today we are going to be mixing Classic American Style Biscuits and we are going to use butter as the fat for our biscuits But you can actually substitute the butter for shortening or lard in these biscuits and if i am going to be eating these with something really savory like biscuits and gravy.

I really love to use lard in these biscuits it makes amazing biscuits But if you are going to be eating them with jam or honey or something a little sweeter i like to use the butter but that's really up to you.

A. Tools Which i Recommend for this Recipe for Fluffy Biscuit are :-

a. Whisk
b. Pastry cutter or fork which is what we are going to use to cut our fat into the flour.
c. A Rubber Spatula
d. A round cutter to cut out our biscuits and this one is about two and a half inches wide.
e. A pan to bake our biscuits in, i like to use a cake pan with high sides so that the Biscuits have something to cling to and climb up while baking But you could also use a parchment lined baking sheet if you prefer.

Now you are also going to need to Preheat your oven to 450 degrees Fahrenheit before you start making your biscuit dough.


2 cups of All Purpose Flour
1 tbsp of Baking Powder
1 & 1/4 tsp of Kosher Salt
1/4 tsp of Baking Soda
6 tbsp of very cold Butter cuted into small pieces
1 cup of cold Buttermilk


1. Now take a big bowl and then add all dry ingredients like 2 cups of All Purpose Flour, 1 tbsp of Baking Powder, 1 & 1/4 tsp of Kosher Salt, 1/4 tsp of Baking Soda and whisk all of that together until well combined.

2. Now add 6 tbsp of very cold Butter that have cuted into small pieces and then use your pastry cutter or your fork to work the fat into the flour mixture until it is the texture of a coarse meal. Now this process serves two purposes.
First is to coat the flour in the fat which is going to inhibit gluten formation keeping our biscuits really tender. The second is to distribute little pieces of fat throughout your dough. These pieces of fat are going to melt in the oven creating little pockets of falkiness throughout your biscuit.
So the reason you want your butter to be really cold before you do this so that it's saved in solid pieces instead of creating a cohesive dough.

3. Now add 1 cup of cold Buttermilk and use a rubber spatula or a wooden spoon to gently stir the liquid into the mixture. At first it's going to seem like there isn't quite enough liquid but as you stir it in it will start to form a shaggy and sticky dough. Be really gentle here as you don't want to over mix and as your mixture starts forming into a dough you can turn it out onto a lightly floured work surface.

4. Now Flour your hands and gently press the mixture together into one piece of dough and now we are going to add a few folds into our dough which is going to help create flakiness. Press the dough out to about one inch thick and then fold it in half. Now press the dough out again and then create another fold this time going in the opposite direction. Continue doing this about six times. This folding process is creating layers in our dough which will translate into a really flaky biscuit once baked. The gentler you are with your dough here the more tender your biscuit is going to be.

5. Now use your biscuit cutter cutter to stamp out your biscuit. I like to make mine about 1 inch thick to get really tall biscuits. Gently press the scraps together and Stamp out the rest of your biscuits. Bake at 450 degrees Fahrenheit for about 13 to 15 minutes or until golden brown.

6. Now Brush the tops of your warm biscuits with melted butter. These biscuits are incredibly light an tender and just look at all of these layers.
