This is also known as sukha kala chana or punjabi dry channa which is made step wise in the restaurant style in very simple and easy way.


Dry Chana Masala Recipe



For Dry Chana Masala Recipe 

INGREDIENTS REQUIRED 


1 cup chickpea soaked overnight 

1 tsp Salt

1 tsp Tea

2 tbsp Oil

1 tsp Cumin Seeds

1 Bay Leaf

2 dried Chillie

Small pieces of Cinnamon 

5-6 Black Pepper and Cardamom

2 Big Onion paste

1 tsp Turmeric Powder

2 tsp Chilli Powder

1 tsp Cumin Powder

1 tbsp Coriander Powder

1 tbsp Ginger Garlic Paste

1 Large Tomato Puree

1 tsp Salt

2 tbsp Chole Masala Powder

3 tbsp Tamarind Jaggery Paste

1 large roughly chopped Tomato

1 tbsp Salt

2 tbsp Ghee(Butter)

Thinly sliced Ginger and Green Chillies

1 tsp Kashmiri Lal Mirch Powder(optional)

1 tbsp Kasuri Methi (dried Fenugreek Leave)

METHOD OF PREPARATION 


1. Take 1 cup chickpea and dip in the water for overnight or soaked in water for atleast 6 hour and then add it into the pressure cooker with 1 Glass of Water.





2. Now add 1 tsp Salt, add 2 teabags if teabags not available then take small muslin cloth and add 1 tsp Tea on it and then pack it as shown in picture and add into the cooker.







3. Close this cooker and pressure cook it for 5-6 Whistle at medium flame.




4. Take a pan and then add 2 tbsp Oil, 1 tsp Cumin Seeds, 1 Bay Leaf, add 2 dried Chillies, small pieces of cinnamon.







5. Add 5-6 Black Pepper and Cardamom and saute all this till soft aroma.





6. Then add 2 Big Onion paste (I have grind it in the grinder jar) or you can also add 2 chopped onion simply and mix it properly. 






7. Now add 1 tsp Turmeric Powder, 2 tsp Chilli Powder, 1 tsp Cumin Powder, 1 tbsp Coriander Powder and saute all these masala properly. 






8. Add 1 tbsp Ginger Garlic Paste and mix it then cover it with lid and cook for 4-5 minutes on medium flame.







9. After 5 minutes, remove the lid and mix it well and make sure to cook the preparation till the oil started to release. 





10. Now add 1 Large Tomato Puree and saute it well.





11. Add 1 tsp Salt, 2 tbsp Chole Masala Powder and mix it again then add 3 tbsp Tamarind Jaggery Paste and again mix it properly. 








12. Now cover it with lid and let it cook for 5 minutes in medium flame and then remove the lid and mix it.





13. Add 1 large roughly chopped Tomato (deseeded), mix it well and do not cook it, this step is optional. 





14. Now add pressure cooked chole on this pan without water as shown in picture and mix it well.





15. Add 1 tbsp Salt and saute it properly then add 4 tbsp Water then cover and cook for 6 minutes in medium flame. 






16. Remove the lid and saute it well. Saute and mixing is necessary in most of the steps.




17. For Tadka Now heat the small pan and then add 2 tbsp Ghee(Butter), add thinly sliced Ginger and Green Chillies, 1 tsp Kashmiri Lal Mirch Powder(optional) and cook this just for 10 seconds and our tadka is ready.







18. Now add 1 tbsp Kasuri Methi (dried Fenugreek Leave) in the prepared chole and then add prepared tadka to it as well as also add finely chopped coriander leaves and mix everything and switch off the flame.






19. Finally our Homemade Dry Chana Masala Recipe is Ready to Serve hot. Garnish it with chopped coriander and ginger Julian.
