How to make Lemon Coriander Soup at Home

INGREDIENTS REQUIRED
For Stock
1/2 cup Cabbage, chopped
1/2 Carrot, chopped
1 Onion, chopped
1 Ginger, chopped
1 clove Garlic, chopped
6-7 French Beans, chopped
7-8 Bottle Gourd, pieces
Coriander leaves
1 Lemon, zest
5 cups Water
For Soup
1 tsp Oil
3 tbsp Cabbage, chopped
3 tbsp Carrots, chopped
3 tbsp Corn
6-8 Spinach Leaves
Salt to taste
1/4 Black Pepper
Juice of 1 Lime
Coriander Leaves, a handful
For Stock

1/4 Black Pepper

METHOD OF PREPARATION
1. For Preparing Stock In a pot add 1/2 chopped cabbage & carrot, 1 chopped onion, 1 chopped ginger, 1 clove of chopped garlic, 6-7 Chopped french beans, 7-8 pieces of bottle gourd, few springs of coriander, 1 lemon zest(only yellow skin of lemon), 5 cups of water and let it boil for 10-12 minutes. Strain the stock with the help of big sieve and keep it aside.

For Preparing Stock In a pot add 1/2 chopped cabbage & carrot, 1 chopped onion, 1 chopped ginger, 1 clove of chopped garlic, 6-7 Chopped french beans, 7-8 pieces of bottle gourd, few springs of coriander, 1 lemon zest(only yellow skin of lemon), 5 cups of water and let it boil for 10-12 minutes. Strain the stock with the help of big sieve and keep it aside.
2. Now In the same saucepan heat 1tsp oil & once the oil is hot then add 3tbsp chopped cabbage, 3tbsp chopped carrots, 3tbsp corn & mix all these ingredients well.
3. Now add 6-8 spinach leaves & tear this leaves & then add & cook the vegetables for 2 minutes, now add the prepared stock in it and let it boil for 2 minutes.
4. Now add salt to taste, 1/4 tsp crushed black pepper & squeeze a whole lime, add handful of coriander leaves, give it a mix.
